For five years, I searched for a really good blueberry muffin. Finally, I found a recipe that just needed tinkering - and here it is.

This is a great, tangy, lowfat muffin - full of flavor, but not too filling. It has a fresh, clean taste, thanks to the lemon zest and fresh lemon juice, and leftover sugary, tart icing for dipping. . . .
